French style oyster knife with stainless blade, brass ferrule and brass riveted bubinga handle. These are slimmer and thinner at the tip than many American Oyster knives. They are super nimble and pierce easily but tips can break with a prying motion on very hard Pacific oysters.
Established in 1870 and still a family run business, Au Sabot makes knives in traditional and original patterns in Thiers France. They utilize a wide range of new and old equipment and Thiers skilled-handwork is the keystone of their production. Au Sabot knives reflect Thiers’ history as the center of practical, affordable French work knives.
